Protein-Packed Chocolate Energy Bites

They may look like balls of cookie dough ready for the oven, but these delicious snacks don’t require that much preparation time. Power-packed with protein, these two recipes for energy bites are perfect for providing your family with a healthy grab-and-go treat that can conquer your family’s cravings until your next main meal.
MONSTER COOKIE ENERGY BITES
Ingredients
1 cup old-fashioned oats
1 scoop protein powder
1/2 cup peanut butter
1/4 cup honey
1/8 cup mini semi-sweet chocolate chips
1/8 cup mini button chocolates
Instructions
1. Blend oats in a blender so it’s like oat flour.
2. Mix all ingredients in a bowl until distributed evenly. This may take several minutes. The mixture should be dry enough to not stick too much to your hands.
3. Use a small scoop or spoon to portion and roll into a ball with your hands.
4. Place the balls on a baking sheet lined with wax paper and chill in the fridge for an hour.
5. Freeze for later or store in the fridge for up to two weeks.
CHOCOLATE COCONUT ENERGY BITES
Ingredients
1 cup old-fashioned oats
1/2 cup flaked coconut
2 Tbsp. unsweetened cocoa powder
1 Tbsp. flax
1/4 tsp. kosher salt
1/2 cup creamy almond butter
1/4 cup honey
1 tsp. vanilla
1/4 tsp. almond flavoring
3 Tbsp. chocolate chips
(optional) 1 Tbsp. chocolate protein powder
Instructions
1. Mix all ingredients accept chocolate chips in a bowl until distributed evenly. This may take several minutes.
2. Stir in the chocolate chips.
3. Use a small scoop or spoon to portion and roll into a ball with your hands.
